Spicy Sausage Frittata

Ingredients
  

  • 1 lb Pederson’s Spicy Breakfast Sausage
  • 8 Large eggs
  • 8 oz Fresh baby spinach if substituting frozen spinach, defrost it first and squeeze out any excess water
  • ¼ Red onion chopped
  • 1 tbsp Avocado oil
  • 1/2 tsp Black pepper pepper
  • 1 Avocado

Instructions
 

  • Over medium heat, cook the sausage in a skillet until browned. Drain out any excess grease, then add in the onion and spinach.
  • Cook together, seasoning with salt and pepper and stirring occasionally, for about 3 minutes. In a bowl, crack each of the eggs and whisk.
  • Pour the eggs on top, and don’t stir it anymore. Over medium heat, allow the bottom to set without stirring at all, then lower the heat and cover.
  • Cook for another 5-6 minutes (you could also put it under the broiler) or until cooked through. Slide it out of the pan and slice.
  • Top with avocado, sliced radishes and tomatoes.
